Ingredients
  • 500 gram Potatoes
  • 300 gram Tomatoes
  • 3 teaspoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 gram Fresh parsley
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the potatoes into bite-sized cubes.
  3. In a large bowl, combine the potatoes, olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper. Toss until the potatoes are evenly coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast the potatoes in the preheated oven for 25-30 minutes or until golden brown and crispy.
  6. While the potatoes are roasting, dice the tomatoes.
  7. In a small bowl, combine the diced tomatoes with a pinch of salt and pepper.
  8. After the potatoes are roasted, remove them from the oven and let them rest for 5 minutes.
  9. Serve the roasted potatoes with the spicy tomatoes on top.
  10. Garnish with fresh parsley.
