Ingredients
  • 16 ounce Beets
  • 2 teaspoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 ounce Goat cheese
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Trim and peel the beets, then cut them into wedges.
  3. In a bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  4. Add the beet wedges to the bowl and toss until well coated.
  5. Transfer the beets to a baking sheet and spread them out in a single layer.
  6. Roast in the preheated oven for 35-40 minutes, or until the beets are tender.
  7. Remove from the oven and let the beets cool for about 10 minutes.
