Ingredients
  • 2 pound Potatoes
  • 4 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes. Cut them into quarters.
  3. In a large pot, bring water to a boil. Add the potatoes and cook until fork-tender, about 15 minutes.
  4. While the potatoes are cooking, peel the garlic cloves and mince them.
  5. Drain the cooked potatoes and transfer them to a baking sheet. Smash each potato lightly with a fork.
  6. Drizzle the smashed potatoes with olive oil, minced garlic, salt, and black pepper.
  7. Roast in the preheated oven for 15-20 minutes, or until golden and crispy.
  8. Remove from the oven and let them rest for 5 minutes.
  9. Garnish with fresh parsley before serving.
