Ingredients
  • 2 pound Sweet Potatoes
  • 4 clove Garlic Cloves
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 cup Unsweetened Almond Milk
  • 2 tablespoon Vegan Butter
  • 2 tablespoon Chopped Fresh Parsley
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the sweet potatoes into cubes and place them on a baking sheet.
  3. Drizzle the sweet potatoes with olive oil and sprinkle with salt and pepper.
  4. Roast the sweet potatoes in the oven for 30-35 minutes, or until they are tender and golden brown.
  5. While the sweet potatoes are roasting, peel the garlic cloves and boil them in a small saucepan for 10 minutes, or until they are soft.
  6. Drain the garlic cloves and mash them with a fork.
  7. In a large bowl, combine the roasted sweet potatoes, mashed garlic, almond milk, vegan butter, salt, and pepper.
  8. Mash the mixture until smooth and creamy.
  9. Serve the mashed sweet potatoes garnished with chopped fresh parsley.
