Ingredients
  • 2 cup Corn
  • 2 clove Garlic
  • 1 medium Tomato
  • 1/4 small Red Onion
  • 1 small Jalapeno Pepper
  • 1 juice of Lime
  • 2 tablespoon Cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C). Place the corn on a baking sheet and roast for 10 minutes, or until slightly charred. Let it cool.
  2. Meanwhile, mince the garlic and chop the tomato, red onion, jalapeno pepper, and cilantro.
  3. In a large bowl, combine the roasted corn, minced garlic, chopped tomato, red onion, jalapeno pepper, lime juice, cilantro, salt, and black pepper. Mix well.
  4. Let the salsa sit for at least 10 minutes to allow the flavors to meld together.
  5. Serve the roasted corn and garlic salsa with tortilla chips or as a topping for tacos, grilled meats, or salads.
