Ingredients
  • 2 cup Corn kernels
  • 1 cup Red bell pepper
  • 1 cup Green bell pepper
  • 1/2 cup Red onion
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the corn kernels, red bell pepper, green bell pepper, and red onion.
  3. Drizzle olive oil over the mixture and toss to coat evenly.
  4. Add chili powder, cumin, salt, and black pepper. Mix well.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast in the preheated oven for 20 minutes, or until the corn is slightly charred.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Transfer to a serving dish and sprinkle fresh cilantro and lime juice over the top.
  9. Serve hot.
