Ingredients
  • 1.5 cup Chickpeas
  • 1 cup Quinoa
  • 2 cup Mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh cilantro or parsley (optional)
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Rinse the quinoa under cold water and cook according to package instructions.
  3. In a large bowl, toss the chickpeas, mixed vegetables, olive oil, lemon juice, garlic powder, paprika, salt, and black pepper until well coated.
  4. Spread the mixture evenly on a baking sheet and roast for 25 minutes, stirring halfway through.
  5. Once the quinoa and roasted chickpea mixture are ready, divide them into bowls.
  6. Garnish with fresh cilantro or parsley, if desired.
  7. Serve and enjoy!
