Ingredients
  • 1 head Cauliflower
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 1/4 cup Golden Raisins
  • 1/4 cup Pine Nuts
  • 1 teaspoon Orange Zest
  • 2 tablespoon Fresh Parsley
  • 2 tablespoon Orange Juice
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets.
  3. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  4. Spread the cauliflower on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and tender.
  5. In a small bowl, combine the golden raisins, pine nuts, orange zest, parsley, and orange juice.
  6. Once the cauliflower is roasted, transfer it to a serving dish and drizzle the golden raisin mixture over the top.
  7. Let the dish rest for 5 minutes before serving.
  8. Garnish with fresh parsley, if desired.
