Ingredients
  • 1 head Cauliflower
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets and toss with olive oil, salt, and pepper.
  3. Roast the cauliflower in the oven for 25-30 minutes, until golden brown.
  4. In a large pot, sauté the onion and garlic until translucent.
  5. Add the roasted cauliflower, vegetable broth, coconut milk, paprika, salt, and black pepper to the pot.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Use an immersion blender to blend the soup until smooth.
  8. Serve hot, garnished with fresh parsley.
