Ingredients
  • 300 gram Carrots
  • 200 gram Chickpeas
  • 150 gram Quinoa
  • 2 teaspoon Olive Oil
  • 1 teaspoon Lemon Juice
  • 2 clove Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 20 gram Fresh Parsley
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Peel and slice the carrots into sticks.
  3. In a bowl, toss the carrots with olive oil, cumin, paprika, salt, and black pepper.
  4. Spread the carrots on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  5. In a separate pot, cook the quinoa according to package instructions.
  6. In a large bowl, combine the roasted carrots, cooked quinoa, chickpeas, lemon juice, minced garlic, and chopped parsley.
  7. Season with salt and pepper to taste.
  8. Let the flavors meld for 5 minutes before serving. Enjoy!
