  1. Preheat the oven to 400°F (200°C). Cut the butternut squash into small cubes and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for 25-30 minutes or until tender.
  2. In a large bowl, mash the roasted butternut squash with a fork. Add cooked quinoa, breadcrumbs, finely chopped onion, minced garlic cloves, ground cumin, paprika, salt, and black pepper. Mix well until combined.
  3. Shape the mixture into patties and place them on a greased baking sheet. Bake at 400°F (200°C) for 15-20 minutes or until golden brown.
  4. Toast the whole wheat burger buns. Place a lettuce leaf on the bottom half of each bun, followed by a roasted butternut squash-quinoa patty. Top with tomato slices and avocado slices. Cover with the top half of the bun.
