Ingredients
  • 24 ounce Butternut Squash
  • 2 medium Red Onions
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Peel and dice the butternut squash into 1-inch cubes.
  3. Slice the red onions into thick wedges.
  4. In a large bowl, toss the butternut squash and red onions with olive oil, salt, black pepper, and fresh thyme.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast in the preheated oven for 30-35 minutes, or until the squash is tender and caramelized.
  7. Remove from the oven and let it rest for 5 minutes.
