Ingredients
  • 4 medium-sized Beets
  • 4 cups Arugula
  • 1 cup Walnuts
  • 4 ounces Goat Cheese
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons Olive Oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • to taste Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Trim and peel the beets, then cut them into wedges.
  3. Toss the beet wedges with olive oil, salt, and black pepper.
  4. Place the beets on a baking sheet and roast for about 25-30 minutes, or until tender.
  5. While the beets are roasting, prepare the dressing by whisking together balsamic vinegar, olive oil, honey, salt, and black pepper in a small bowl.
  6. Once the beets are done, remove them from the oven and let them cool for a few minutes.
