Ingredients
  • 500 gram Asparagus
  • 2 teaspoon Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Trim the woody ends of the asparagus spears.
  3. Place the asparagus on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  4. Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly charred.
  5. In a small bowl, whisk together the red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper.
  6. Remove the roasted asparagus from the oven and drizzle with the vinaigrette.
  7. Let the asparagus rest for 5 minutes before serving.
  8. Serve the roasted asparagus vinaigrette as a side dish or appetizer.
