Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.

Roast the tomatoes in the oven for 30 minutes, or until they are soft and slightly charred.

In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until they are soft and translucent.

Add the roasted tomatoes, vegetable broth, and fresh basil leaves to the pot. Bring to a boil, then reduce the heat and let simmer for 10 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Season with salt and pepper to taste.

While the soup is simmering, prepare the olive oil toasts. Drizzle olive oil on both sides of the bread slices and toast them in a skillet over medium heat until golden brown.
