Ingredients
  • 500 gram Sweet Potatoes
  • 3 teaspoon Maple Syrup
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 1 teaspoon Vanilla Extract
  • 2 teaspoon Coconut Oil
  • 0.5 cup Chopped Pecans
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Wash and peel the sweet potatoes. Cut them into small cubes.
  3. In a large mixing bowl, combine the cubed sweet potatoes, maple syrup, cinnamon, nutmeg, vanilla extract, and coconut oil. Mix well to coat the sweet potatoes evenly.
  4. Transfer the sweet potato mixture to a baking dish and spread it out in an even layer.
  5. Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are soft and tender.
  6. Remove from the oven and sprinkle the chopped pecans over the top.
  7. Return to the oven for an additional 5 minutes to toast the pecans.
  8. Remove from the oven and let cool slightly before serving. Enjoy!
