Ingredients
  • 2 cup Rice
  • 1 cup Red Kidney Beans
  • 1 cup Coconut Milk
  • 1.5 cup Water
  • 1 bunch Scallions
  • 1 sprig Thyme
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 whole Scotch Bonnet Pepper
Instructions
  1. Rinse the rice and set aside.
  2. In a large pot, combine the coconut milk, water, scallions, thyme, garlic, salt, black pepper, and Scotch bonnet pepper.
  3. Bring the mixture to a boil over medium heat.
  4. Add the rice and kidney beans to the pot and stir well.
  5. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove the Scotch bonnet pepper before serving.
  7. Allow the rice to rest for 5 minutes before fluffing it with a fork.
  8. Serve hot and enjoy!
