Ingredients
  • 2 cup Rice
  • 1 can Red Kidney Beans
  • 1 cup Coconut Milk
  • 1.5 cup Water
  • 1 bunch Scallions
  • 2 sprig Thyme
  • 3 clove Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 whole Scotch Bonnet Pepper
Instructions
  1. Rinse the rice and set aside.
  2. In a large pot, combine the coconut milk, water, scallions, thyme, garlic, salt, black pepper, and Scotch bonnet pepper.
  3. Bring the mixture to a boil, then reduce heat to low and let it simmer for 5 minutes.
  4. Add the rice and kidney beans to the pot and stir well.
  5. Cover the pot and let it cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Remove from heat and let it rest for 5 minutes before fluffing the rice with a fork.
  7. Serve hot and enjoy!
