Ingredients
  • 2 cup Red rice
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 medium Bell pepper
  • 2 medium Tomato
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 2 tablespoon Cilantro leaves
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the red rice and soak it in water for 30 minutes.
  2. In a large pot, heat some oil and sauté the chopped onion and minced garlic until golden brown.
  3. Add the diced bell pepper and cook for a few minutes.
  4. Stir in the chopped tomatoes and cook until they soften.
  5. Drain the soaked rice and add it to the pot.
  6. Add the vegetable broth, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes or until the rice is cooked.
  8. Remove from heat and let it rest for 5 minutes.
  9. Garnish with cilantro leaves and drizzle with lemon juice.
  10. Serve hot and enjoy!
