Ingredients
  • 1 pound Red Potatoes
  • 1 bunch Asparagus
  • 1 can Artichoke Hearts
  • 1 small Red Onion
  • 1 cup Fresh Parsley
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Bring a pot of salted water to a boil. Add the red potatoes and cook until tender, about 10 minutes. Drain and let cool.
  2. Meanwhile, trim the asparagus and cut into 1-inch pieces. Steam or blanch until tender-crisp, about 3 minutes. Rinse under cold water and drain.
  3. In a large bowl, combine the cooked potatoes, asparagus, artichoke hearts, red onion, and fresh parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
  5. Pour the dressing over the salad and toss to coat.
  6. Let the salad rest for 10 minutes to allow the flavors to meld.
  7. Serve chilled or at room temperature.
