Ingredients
  • 2 piece Red bell peppers
  • 2 clove Garlic cloves
  • 1 tablespoon Lemon juice
  • 1 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper
  • 0.5 teaspoon Agave syrup
  • 1 cup Vegan mayonnaise
Instructions
  1. Preheat the broiler. Place the red bell peppers on a baking sheet and broil until the skins are blackened and blistered, turning occasionally.
  2. Remove the peppers from the broiler and place in a bowl. Cover with plastic wrap and let cool for 10 minutes.
  3. Once cooled, peel off the skins of the peppers and remove the seeds and stems.
  4. In a blender, combine the roasted red peppers, garlic cloves, lemon juice, olive oil, salt, black pepper, cayenne pepper, agave syrup, and vegan mayonnaise.
  5. Blend until smooth and creamy.
  6. Transfer the red pepper mayonnaise to a jar or container and refrigerate for at least 1 hour before serving.
  7. Enjoy the red pepper mayonnaise as a dip, spread, or sauce!
