Ingredients
  • 1 cup Red lentils
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 4 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 2 tablespoon Cilantro leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrot, and celery. Cook until vegetables are tender.
  4. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in lime juice, cilantro leaves, salt, and black pepper.
  6. Remove from heat and let it rest for 5 minutes.
