Ingredients
  • 1 cup Red lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse the red lentils under cold water.
  2. In a large pot, heat some oil over medium heat and sauté the onion, carrot, celery, and garlic until softened.
  3. Add the rinsed lentils, vegetable broth, tomato paste, cumin, coriander, paprika, salt, and black pepper to the pot. Stir well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Remove the pot from the heat and let the soup rest for 5 minutes.
  6. Use an immersion blender or a regular blender to blend the soup until smooth.
  7. Stir in the lemon juice and adjust the seasoning if needed.
  8. Serve the soup hot, garnished with fresh cilantro.
