Ingredients
  • 1 cup Red lentils
  • 1 medium Onion
  • 1 medium Carrot
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 tablespoon Tomato paste
  • 1 cup Vegetable broth
  • 2 tablespoon Ground flaxseed
  • 1 cup Oats
  • 2 tablespoon Nutritional yeast
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Ketchup
  • 1 tablespoon Maple syrup
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cook the red lentils according to package instructions and set aside.
  3. In a large skillet, sauté the onion, carrot, and garlic in olive oil until softened.
  4. Add the tomato paste and cook for another minute.
  5. In a large bowl, combine the cooked lentils, sautéed vegetables, vegetable broth, ground flaxseed, oats, nutritional yeast, dried thyme, dried oregano, salt, and black pepper. Mix well.
  6. Transfer the mixture to a greased loaf pan and smooth the top.
  7. In a small bowl, whisk together the ketchup and maple syrup. Spread the mixture over the top of the lentil loaf.
  8. Bake for 40-45 minutes, or until the loaf is firm and golden brown.
  9. Allow the loaf to rest for 10 minutes before slicing and serving.
