Ingredients
  • 1 cup Red Lentils
  • 1 cup Apricots
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Cayenne Pepper
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • to taste Black Pepper
Instructions
  1. Rinse the red lentils under cold water.
  2. In a large pot, sauté the onion, carrot, celery, and garlic until softened.
  3. Add the red lentils, apricots, vegetable stock, cumin, coriander, and cayenne pepper to the pot.
  4. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes until the lentils are cooked.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Stir in the lemon juice, salt, and black pepper.
  7. Let the soup rest for 5 minutes before serving.
  8. Garnish with fresh herbs or a drizzle of olive oil, if desired.
