Ingredients
  • 500 gram Sweet potatoes
  • 400 ml Coconut milk
  • 2 teaspoon Red curry paste
  • 500 ml Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 20 gram Cilantro leaves
Instructions
  1. Peel and chop the sweet potatoes, onion, garlic, and ginger.
  2. In a large pot, heat some oil over medium heat and add the chopped onion, garlic, and ginger. Cook until fragrant.
  3. Add the red curry paste and cook for another minute.
  4. Add the chopped sweet potatoes, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the sweet potatoes are tender.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Stir in the lime juice and season with salt to taste.
  7. Serve the soup hot, garnished with cilantro leaves.
