Ingredients
  • 200 gram Rice Noodles
  • 2 teaspoon Red Curry Paste
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 8 ounce Tofu
  • 1 piece Red Bell Pepper
  • 2 piece Carrots
  • 1 cup Snow Peas
  • 2 tablespoon Lime Juice
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Brown Sugar
  • 0.5 cup Fresh Basil Leaves
  • 0.5 cup Cilantro
  • 0.5 teaspoon Salt
Instructions
  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat red curry paste over medium heat for 1 minute.
  3. Add coconut milk and vegetable broth. Stir well.
  4. Add tofu, red bell pepper, carrots, and snow peas. Cook for 5 minutes.
  5. Stir in lime juice, soy sauce, and brown sugar.
  6. Add cooked rice noodles and mix well.
  7. Cook for an additional 2 minutes.
  8. Serve hot, garnished with fresh basil leaves and cilantro.
  9. Season with salt to taste.
