Ingredients
  • 1 cup Red beans
  • 1 cup Black beans
  • 2 cup Rice
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Bell pepper
  • 1 medium Tomato
  • 2 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
  • 4 wedge Lime
Instructions
  1. Rinse and soak the red and black beans overnight.
  2. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  3. Add the soaked beans, vegetable broth, cumin, paprika, salt, and black pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the beans are tender.
  5. Cook the rice separately according to package instructions.
  6. Once the beans are cooked, add the diced tomato and cilantro to the pot and let it simmer for another 5 minutes.
  7. Serve the beans and rice together, garnished with a squeeze of lime juice.
