Red Beans and Rice is a traditional Monday dish in New Orleans, as it was often prepared using leftover Sunday ham bones.

Rinse and drain the red kidney beans.

In a large pot, combine the beans, vegetable broth, bay leaves, Cajun seasoning, salt, and black pepper. Bring to a boil.

Reduce heat to low and simmer for 30 minutes, or until the beans are tender.

While the beans are simmering, cook the rice according to package instructions.

In a separate pan, sauté the onion, green bell pepper, celery, and garlic until softened.

Once the beans are tender, remove the bay leaves and stir in the sautéed vegetables.

Add hot sauce to taste.

Serve the red beans over cooked rice.

Garnish with chopped green onions and fresh parsley.
