Ingredients
  • 1 cup Peanut Butter
  • 2 tablespoon Coconut Oil
  • 2 tablespoon Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 3 tablespoon Cacao Powder
  • 1 pinch Salt
  • 1 cup Medjool Dates
  • 1 cup Almond Flour
  • 12 tablespoon Peanut Butter (for filling)
  • 2 tablespoon Coconut Oil (for filling)
  • 2 tablespoon Maple Syrup (for filling)
  • 1 teaspoon Vanilla Extract (for filling)
Instructions
  1. In a mixing bowl, combine peanut butter, melted coconut oil, maple syrup, vanilla extract, cacao powder, and salt. Mix well.
  2. In a food processor, blend dates and almond flour until a sticky dough forms.
  3. Press the dough into the bottom of a lined muffin tin to form the base.
  4. In a separate bowl, mix together the filling ingredients: peanut butter, melted coconut oil, maple syrup, and vanilla extract.
  5. Spoon the filling mixture over the base in the muffin tin.
  6. Place in the refrigerator to set for at least 2 hours.
  7. Once set, remove from the muffin tin and enjoy!
