  • 200 gram Sweet potato
  • 100 gram Baby spinach
  • 100 gram Avocado
  • 100 gram Cherry tomatoes
  • 50 gram Red onion
  • 2 teaspoon Lemon juice
  • 1 teaspoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Peel and slice the sweet potato into thin rounds.
  2. Rinse the baby spinach and cherry tomatoes.
  3. Slice the avocado and red onion.
  4. In a bowl, mix the lemon juice, olive oil, salt, and black pepper.
  5. Place a sweet potato round on a plate and layer with baby spinach, avocado, cherry tomatoes, and red onion.
  6. Drizzle the lemon juice mixture over the stack.
  7. Repeat the layers until all ingredients are used.
