Ingredients
  • 400 gram Eggplant
  • 300 gram Zucchini
  • 300 gram Bell pepper
  • 200 gram Onion
  • 2 gram Garlic cloves
  • 500 gram Tomatoes
  • 3 tablespoon Olive oil
  • 2 teaspoon Herbs de Provence
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a large pan, heat the olive oil over medium heat.
  2. Add the onion and garlic, and cook until they become translucent.
  3. Add the eggplant, zucchini, bell pepper, and tomatoes to the pan. Stir well.
  4. Sprinkle the herbs de Provence, salt, and black pepper over the vegetables. Mix everything together.
  5. Reduce the heat to low, cover the pan, and simmer for 30-40 minutes, until the vegetables are tender. Stir occasionally.
  6. Remove from heat and let it cool slightly before serving.
  7. Ratatouille can be served as a main course or as a side dish. Enjoy!
