Press the tofu to remove excess water, then cut it into cubes.

Preheat the oven to 400°F (200°C).

In a bowl, whisk together the olive oil, soy sauce, rice vinegar, maple syrup, minced garlic, and grated ginger.

Toss the tofu cubes in the marinade and let them sit for 10 minutes.

Place the marinated tofu on a baking sheet and bake for 10 minutes, or until crispy.

Meanwhile, prepare the vegetables by slicing the bell peppers, cucumber, carrot, purple cabbage, and spring onions.

In a large bowl, combine the sliced vegetables and toss with the lime juice.

Add the baked tofu cubes to the bowl and sprinkle with sesame seeds and chopped cilantro.
