Ingredients
  • 2 cup Spinach
  • 2 medium Carrot
  • 1 cup Red cabbage
  • 1 medium Yellow bell pepper
  • 1 medium Orange bell pepper
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Avocado
  • 2 tablespoon Pumpkin seeds
  • 1 medium Lemon
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
Instructions
  1. Wash and chop all vegetables.
  2. In a large bowl, combine spinach, carrot, red cabbage, bell peppers, cherry tomatoes, cucumber, and avocado.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss well.
