The combination of different colored bell peppers in this dish adds not only vibrant colors but also a variety of nutrients. Red bell peppers are a great source of vitamin C, yellow bell peppers contain high levels of vitamin A, and green bell peppers are rich in vitamin K.

Rinse and drain the black beans, kidney beans, and pinto beans.

Dice the red bell pepper, yellow bell pepper, green bell pepper, and red onion.

Heat olive oil in a large pan over medium heat.

Add the diced vegetables and garlic cloves to the pan. Sauté for 5 minutes.

Add the cumin powder, paprika, salt, and black pepper to the pan. Stir well.

Add the rinsed beans to the pan. Stir to combine.

Reduce the heat to low and simmer for 20 minutes, stirring occasionally.

While the beans are simmering, cook the rice according to package instructions.
