Ingredients
  • 1 cup Quinoa
  • 1 cup Kumquats
  • 1 cup Leeks
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Rinse the quinoa thoroughly.
  2. In a medium saucepan, bring 2 cups of water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes or until the water is absorbed.
  3. In a large skillet, heat olive oil over medium heat. Add leeks and sauté until they are softened, about 5 minutes.
  4. Add kumquats and sauté for another 2 minutes.
  5. Add cooked quinoa, lemon juice, salt, and pepper to the skillet. Stir well to combine all the ingredients.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve warm and enjoy!
