Ingredients
  • 1 cup Quinoa
  • 4 cup Vegetable broth
  • 2 medium Carrot
  • 2 stalk Celery
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Tomato
  • 1 medium Zucchini
  • 1 medium Bell pepper
  • 2 tablespoon Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the quinoa under cold water.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the onion, garlic, carrot, celery, bell pepper, and zucchini. Sauté for 5 minutes.
  4. Add the paprika, cumin, salt, and black pepper. Stir well.
  5. Add the rinsed quinoa and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes, or until the quinoa is cooked and the vegetables are tender.
  7. Stir in the chopped tomato, fresh parsley, and lemon juice.
  8. Let the soup rest for 5 minutes before serving.
  9. Serve hot and enjoy!
