Ingredients
  • 1 cup Quinoa
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 1 cup Fresh parsley
  • 1 small Red onion
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. Chop cherry tomatoes, cucumber, red bell pepper, and red onion.
  3. In a large bowl, combine cooked quinoa, chopped vegetables, and fresh parsley.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the quinoa and vegetable mixture, and toss to combine.
  6. Serve immediately or refrigerate for later.
