Ingredients
  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh mint
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse quinoa in a fine-mesh sieve under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes.
  2. Meanwhile, chop cucumber, cherry tomatoes, red bell pepper, red onion, parsley, and mint.
  3. In a large bowl, combine cooked quinoa, chopped vegetables, parsley, mint, lemon juice, olive oil, salt, and black pepper. Mix well.
  4. Let the salad rest for 10 minutes before serving. Enjoy!
