Ingredients
  • 1 cup Quinoa
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 1 medium Carrot
  • 1 medium Red bell pepper
  • 1 cup Frozen peas
  • 0.5 cup Dried cranberries
  • 1/4 cup chopped Parsley
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa and simmer for 15 minutes.
  3. In a separate skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the carrot and red bell pepper to the skillet and cook for 5 minutes.
  5. Stir in the cooked quinoa, frozen peas, dried cranberries, parsley, dried thyme, salt, and black pepper. Cook for an additional 5 minutes.
  6. Remove from heat and stir in lemon juice.
  7. Let the pilaf rest for 5 minutes before serving.
  8. Serve hot and enjoy!
