Quinoa Pilaf
Quinoa is actually a seed, not a grain, and it is a complete protein source.
This is vegan and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa and simmer for 15 minutes.

In a separate skillet, heat olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the carrot and red bell pepper to the skillet and cook for 5 minutes.

Stir in the cooked quinoa, frozen peas, dried cranberries, parsley, dried thyme, salt, and black pepper. Cook for an additional 5 minutes.

Remove from heat and stir in lemon juice.

Let the pilaf rest for 5 minutes before serving.
