  • 1 cup Quinoa
  • 1 cup Corn
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 small Red onion
  • 1/4 cup Fresh cilantro
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, corn, diced red bell pepper, diced cucumber, finely chopped red onion, and chopped fresh cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
