Ingredients
  • 1 cup Quinoa
  • 1 can Black beans
  • 1 medium Red bell pepper
  • 1 cup Corn kernels
  • 1 small Red onion
  • 1 bunch Cilantro
  • 1 medium Lime
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Avocado
Instructions
  1. Rinse the quinoa under cold water and cook according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add diced red onion and sauté until translucent.
  3. Add diced red bell pepper, corn kernels, and cumin. Sauté for another 3-4 minutes.
  4. Drain and rinse the black beans. Add them to the skillet and cook for 2-3 minutes.
  5. In a large bowl, combine cooked quinoa, sautéed vegetables, chopped cilantro, lime juice, salt, and black pepper. Mix well.
  6. Let the flavors blend by allowing the dish to rest for 5 minutes.
  7. Serve the quinoa and black bean bliss with sliced avocado on top.
