Ingredients
  • 1 cup Quinoa
  • 2 cup Vegetable broth
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 medium Zucchini
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 tablespoon Lemon juice
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 piece Tortilla wraps
  • 4 tablespoon Fresh cilantro
Instructions
  1. Rinse the quinoa under cold water. In a saucepan, bring the vegetable broth to a boil and add the quinoa. Cook according to package instructions.
  2. While the quinoa is cooking, chop the red and yellow bell peppers, zucchini, red onion, and garlic cloves.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped vegetables and sauté for about 5 minutes until they are tender.
  4. In a small bowl, whisk together lemon juice, cumin, smoked paprika, salt, and black pepper.
  5. Add the cooked quinoa and the lemon juice mixture to the skillet with the vegetables. Stir well to combine and cook for an additional 2 minutes.
  6. Warm the tortilla wraps in a dry skillet or microwave.
  7. Spoon the quinoa and vegetable mixture onto each tortilla wrap. Top with fresh cilantro.
  8. Roll up the wraps tightly, tucking in the sides as you go.
  9. Let the wraps rest for 5 minutes before serving.
  10. Serve the vegetable quinoa wraps warm and enjoy!
