Ingredients
  • 500 gram Cabbage
  • 200 gram White beans
  • 1 piece Onion
  • 1 piece Carrot
  • 2 piece Celery stalks
  • 2 piece Garlic cloves
  • 1000 milliliter Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and garlic cloves. Cook until vegetables are tender, about 5 minutes.
  2. Add chopped cabbage and cook for another 5 minutes.
  3. Add white beans and vegetable broth. Season with salt and black pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Serve hot, garnished with chopped parsley.
