Ingredients
  • 2 cup Black beans
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lime juice
  • 2 tablespoon Cilantro
  • 1 medium Avocado
Instructions
  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.
  2. Add the cumin, chili powder, salt, and black pepper. Stir well.
  3. Add the black beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Using an immersion blender or a regular blender, blend the soup until smooth.
  5. Stir in the lime juice and cilantro.
  6. Serve hot, garnished with avocado slices.
