Ingredients
  • 4 cup Vegetable broth
  • 2 medium-sized Carrots
  • 2 stalks Celery stalks
  • 1 small Onion
  • 2 cloves Garlic cloves
  • 2 medium-sized Tomatoes
  • 1 cup Mixed vegetables
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried herbs
  • 1 tablespoon Olive oil
Instructions
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and minced garlic, sauté until fragrant.
  3. Add carrots, celery, and mixed vegetables. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add diced tomatoes, salt, pepper, and dried herbs. Cook for an additional 5 minutes.
