Ingredients
  • 500 gram Purple Potatoes
  • 300 gram Purple Carrots
  • 200 gram Purple Cabbage
  • 100 gram Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the purple potatoes, carrots, and cabbage to the pot. Stir well and cook for 5 minutes.
  3. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  4. Remove from heat and let the soup cool slightly.
  5. Using an immersion blender, blend the soup until smooth.
  6. Return the pot to low heat and stir in the coconut milk, lemon juice, salt, and black pepper. Heat through.
  7. Serve the Purple People Eater Soup hot, garnished with a sprinkle of fresh herbs if desired.
