Ingredients
  • 500 gram Potatoes
  • 1 cup Fennel bulb
  • 1 cup Fava beans
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Peel and chop the potatoes. Boil them in salted water until tender. Drain and set aside.
  2. Trim and chop the fennel bulb. Steam or boil until soft.
  3. Shell the fava beans and blanch them in boiling water for 1 minute. Drain and remove the outer skins.
  4. In a large pot, heat the olive oil over medium heat. Add the garlic and cook until fragrant.
  5. Add the cooked potatoes, fennel, and fava beans to the pot. Mash everything together until smooth.
  6. Season with salt and black pepper to taste.
  7. Serve the puree verte garnished with fresh parsley.
