Ingredients
  • 4 cup Yellow Squash
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add sliced yellow squash and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes, or until squash is tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh parsley.
